The handle is the story here. Made from 30-year-old Japanese camellia wood, a dense, fine-grained timber with a natural oil content that makes it water-resistant and unusually durable for a kitchen tool. Each handle follows the natural form of the wood, so no two look exactly alike.

The stainless steel blade spreads butter cleanly straight from the fridge, and works just as well for soft cheeses, pâté, or jam. At 225mm it's a comfortable length.
