How to Make the Perfect Strawberry Sando at Home (Japanese Fruit Sandwich Recipe)

Sharing a simple strawberry sandwich recipe 🍓 Inspired by Japanese pastry chef Masayuki Murayoshi.

Strawberry Sando (いちごサンド or ichigo sando) is a beloved Japanese dessert that you'll find in convenience stores and fancy fruit parlours across Japan. "Sando" is just the Japanese abbreviation for sandwich, and "ichigo" means strawberry.

These fruit sandwiches have been a thing in Japan since the 1920s, but they've recently gone viral worldwide, and for good reason. The combination of light-as-air whipped cream, fresh seasonal fruit, and soft milk bread is absolutely addictive.

Ingredients

For the Yoghurt Cream:

  • 200ml fresh cream
  • 1 tablespoon sugar
  • 2 tablespoons Greek yoghurt

For the Sandwich:

  • 4 slices soft white bread (thick-cut works best)
  • 10 fresh strawberries

Optional: a thin spread of strawberry jam

How to make it

1.Make the Yoghurt Cream

Pour your chilled cream into a large bowl with the sugar. Using electric beaters whip until you get medium peaks, you want it thick enough to hold its shape, but still spreadable.
Gently fold in the Greek yoghurt. Don't overmix here; you want to keep that lovely airy texture.
Pop the cream in the fridge while you prep everything else.

2.Prep Your Strawberries

Wash and dry your strawberries thoroughly (this is important, wet strawberries will make your bread soggy).
Hull them by cutting off the green tops.

3.Assemble

Spread a generous layer of yoghurt cream on one slice, about 1cm thick.

Arrange your strawberries in a diagonal line across the bread.

Cover with more cream, filling in all the gaps around the strawberries.

 

Top with the second slice of bread and press down gently.

4.Wrap and Chill

Wrap the whole sandwich tightly in cling film. Pop it in the fridge for at least 15 minutes. This helps everything set and makes cutting much easier.

5.Slice and Serve

Unwrap your sando and use a sharp knife to cut along your marked line. Pro tip: warm your knife under hot water first, this gives you clean cuts.
