The Gyutou is the Japanese version of a classic European chef’s knife. It is a versatile, all-purpose knife that can handle almost any kitchen task. The word “Gyutou” means “beef knife” in Japanese.

Compared to European knives, Japanese gyutou are usually lighter and thinner, and made with harder steel. This makes them very sharp and able to hold their edge longer. The blade has no bolster at the heel, so the entire edge can be sharpened and fully used.

The blade features a VG10 steel core with stainless steel cladding, offering excellent sharpness and durability. With a hardness of 60 on the Rockwell scale, it maintains a strong edge even with frequent use. The reinforced Eco wood handle is more water-resistant than traditional wood and feels comfortable in the hand.
